Ingredients

  • 1 lb. Pulled Pork

  • 1 cup Red Onion, diced

  • 2 cups Cherry Tomato, diced

  • 6 ounces Tortilla Chips

  • 1 15 oz. can Black Beans

  • 4 cups Cheddar Cheese, shredded

  • 3 Guacamole, heaping TBSP

  • 1 cup Montgomery Inn BBQ Sauce

Directions

  1. Preheat oven to 400°F.

  2. Remove Pulled Pork from packaging, place in a microwave-proof bowl, cover with film, and cook in the microwave for 4 minutes.

  3. Cover a 13 x 9 baking tray with a sheet of parchment paper. Place tortilla chips generously on tray, covering bottom evenly. Stack remaining chips as a second and third layer.

  4. Place Pulled Pork on top of chips, in a random fashion. Try and get as many of the chips covered as possible.

  5. Sprinkle diced onion and tomato on top of the chips. Sprinkle cheese over the entire area. Drizzle BBQ Sauce in a zig-zag pattern across the chips.

  6. Place in heated oven for 8-10 minutes (until cheese is melting).

  7. Remove from oven and top with 3 dollops of Guacamole.
